Weekend Notes ~ 17th-18th November
So we are in the third weekend of November. Tomorrow, Saturday the 17th celebrates the Homemade Bread Day so why not bake this weekend too?
What to Eat
Seasonal vegetable and beef stew with homemade bread!
Ingredients {Makes: one loaf of bread}
- 300ml tepid water
- 50ml olive oil
- 8g dried active yeast
- 500g plain white bread flour
- 8g salt
- 12g granulated sugar
Method {Prep: 20min › Cook: 30min › Extra time: 2hr rising › Ready in: 2hr50min}
- Add the yeast and olive oil to the water, do not stir.
- Mix together the flour, salt and sugar.
- After 3 minutes thoroughly stir the yeast mixture, it should appear milky, then add to the flour.
- Initially stir with a spoon but when it has combined take it out and knead on a board or work surface, and use olive oil to prevent sticking, not flour. After approximately 10 minutes of kneading you will feel the dough change as the gluten builds up, you should have a smooth stretchy dough.
- Grease a bowl with olive oil and place the dough in it. Cover with a cloth or cling film and leave in a warm place until doubled in size. I place mine in my fan oven on its defrost setting and it takes about an hour.
- When doubled in size throw a little flour on a flat roasting tin, remove the dough and knead it for 2 minutes to knock the air out of it, then shape the dough into an oval shape (but don’t worry what shape it is, it will turn out good either way). Place back in the warm place uncovered until it has risen to a large size.
- Preheat an oven to 200°C and score the dough a few times with a sharp knife, then bake for approximately 30 minutes. It takes 27 minutes in my oven for a soft loaf and 32 for a crusty loaf. Leave to cool on a wire rack.
A ‘could’ do list:
- Go on a hike (as it is ‘take a hike day’ too tomorrow)
- Have a picnic
- Put away light Autumn clothes and take out warmer ones
- Take out (or buy) hair care and skincare for the colder months
- Long, hot relaxing bath

Hi Rach, I am really glad you enjoyed this post. The bread was absolutely delicious and the house smelled divine. At the end of the day, it’s the small things we do every day that matters and this is my aim with these posts. Great movie choices. I am definitely going to make that bread. I haven’t made any in a few years but that look’s worthy of my efforts. Maybe the next time I make homemade soup. Thanks for sharing that with us.

Thank you Nancy. I do love snuggling up on the sofa with a couple of movies during the colder months. I used to bake my own bread every week about a year ago and I honestly only recently realised how much I miss it. There’s nothing like the fragrance of freshly baked bread.
